8 months ago, I had no clue how to juggle it all.

8 months ago, I had no clue how to juggle it all.

Now I’ve learned how to run my bakery and hold a part-time job without burning out (most days 😉).

Here’s what changed:
- I start my days early and protect my mornings. For me, this means eating an actual breakfast with WHOLE foods. It’s truly shocking how much better I feel when I eat a legitimate meal instead of cheese slices…

- I build small, repeatable routines that keep me focused. There’s a lot of wait time in sourdough baking and the way you optimize your wait time (whether you’re a baker or not) matters.

- Most importantly I have to remind myself daily to stop comparing my timeline to anyone else’s. Social media can make it seem like everything is moving so fast, therefore, we need to catch up. But the reality is, some of us are just starting out while others have been here for a while. Everyone’s timeline is unique to them. Someone else’s timeline and success has nothing to do with mine.

If you’re chasing a dream while working another job, you’re not behind. You’re building something real and it’s okay to figure it out as you go.

This week, I’ve been thinking about what it means to make business decisions you feel good about, even when you’re just starting out.

One of the best choices we’ve made in our bakery is switching to baking our sourdough in loaf pans.

Here’s why:
- Every slice is the same size (perfect for sandwiches or toast)
- No more “will it fit in the toaster?” struggles (🙌🏻)
- Our customers love that it feels like bread they can use every day, but better

Sometimes it’s tempting to follow what everyone else in the sourdough world is doing, but this is proof that leaning into what makes you different actually works.

If you’re new to baking (or building a business), this is your reminder: trust your gut! Even the small decisions can set you apart.

The little things matter more than I thought.

I can’t lie… I’m not great at prepping bags, labels, or signage ahead of time. I usually leave it all for the night before a market… when I’m exhausted and just trying to make it to the finish line.

But every time I take the time to prep early, even something as simple as folding bags, I feel so much better! I move through the day calmer. More focused, and I’m not running around like a chicken with my head cut off👍🏻

I’m learning to give those “little” tasks the same respect I give the dough.
It’s definitely not my strength yet, but I’m working on it! I promise.

Running a microbakery means things don’t always go

Running a microbakery means things don’t always go as planned.

Like this weeks Dough Day when I came back to my starter 8 HOURS after feeding it, and it hadn’t budged…like, at all.

I’ve learned to stay flexible on dough days, but I still needed to find a solution fast. My usual oven-light trick wasn’t cutting it… so I tried something a little unhinged😅

Our garage was warm. Warmer than my kitchen. So I thought why not🤷🏻‍♀️

I tucked my starter in there for 2 hours and it worked!

Not a tip you’ll typically find on the internet, but that’s kind of the point.

This bakery has taught me to stop waiting for the “right” conditions and start working with what I’ve got. Especially because this is the beginning of my bakery journey. Making it work with what you have is kind of the only option.

It’s not always pretty or perfect but it gets the job done.

3 tbsp Pesto
1 cup Mozzarella Cheese
1 cup Cooked shredded chicken
1 handful Fresh Basil
1 tsp Spices – Oregano and Thyme

Somewhere along the way, I started treating 3-month timelines like they should yield 3-year results.
But growth—real growth—takes time.

My microbakery reminds me of that every day.

It reminds me that consistency matters more than speed. That small steps still move you forward. That it’s okay if it takes time to build something meaningful.

There’s no such thing as “behind” when you’re showing up and doing the work.
