Easy Protein-Packed Sourdough Waffles with Strawberries

These easy protein-packed sourdough waffles with strawberries make such a nourishing breakfast. They're crispy, fluffy, and full of flavor and protein.

Equipment

  • Large Bowl
  • Whisk
  • Measuring cups/food scale
  • Waffle maker

Ingredients
  

  • 1 scoop Protein powder
  • 1 tsp (10g) Baking soda
  • cups (522g) Sourdough starter
  • 1 tsp (10g) Vanilla extract
  • ¼ cup (42g) Coconut oil For the batter and the waffle maker
  • 1 Egg

Greek Yogurt Topping

  • 2 tbsp Greek yogurt
  • 1 tbsp Honey For the greek yogurt topping
  • 1 handful Strawberries

Instructions
 

  • Take a little bit of coconut oil and grease the waffle maker. Then plug in your waffle maker so it starts to heat up.
  • Add the coconut oil to a microwavable bowl and melt the coconut oil in the microwave until it's just melted.
  • In a large bowl, whisk the protein powder, starter, baking soda, vanilla extract, egg, and coconut oil.
  • Fill the waffle maker with the batter and bake the waffles as you normally would in your waffle maker.
  • Set aside the waffles to cool while you make the strawberry greek yogurt topping.
  • Take two tablespoons of greek yogurt in a bowl, a handful of strawberries, and honey and whisk them together.
  • Place this on top of your waffles, add more fresh strawberries and drizzle some maple syrup on top.

Notes

Storage - You can store these easy protein-packed sourdough waffles and the strawberries in the fridge for about 5 days, and in the freezer for about 3 months.
Tips:
    • Adding nuts to the batter is a great way to sneak in healthy fats!
    • Adjust the heat depending on how finicky your waffle maker is.
