This flatbread recipe has been a game changer in our home recently. It uses up a ton of discard and it’s one of those ‘throw it all in a bowl’ recipes. We love quick and easy recipes that require minimal effort.

Tips For This Quick and Easy Recipe
It’s not that deep – Don’t make this more complicated than it needs to be. These ingredients are so flexible and will work together no matter what. Just throw it all in the mixer and move on.
Add more! – This sourdough flatbread recipe is so easy to double if needed. Just add another cup of sourdough discard and keep everything else the same. You’ll still end up with the same amazing flavor and plenty of extra for meal prep!
Choose your own adventure – Make your flatbread taste how ever you’d like! If you’re into spicy food, I’d recommend adding cayenne, or smoked paprika.
Tools You May Need
Stand mixer – Any time I use a stand mixer for a recipe, please know you can always use a bowl, whisk, or your hands, depending on what the recipe calls for. I just like the stand mixer because it makes things much quicker.
Bowl – To measure out dry ingredients.
Knife or bench scraper – To cut the dough.
Rolling pin
Large skillet

Quick and Easy Sourdough Flatbread Ingredients
Flour – I use bread flour, but you can use all-purpose if needed.
Salt
Sourdough Starter – Of course. You can use discard or active starter.
Olive oil – For cooking and adding to the dough
Spices – I used black pepper, garlic powder, and parsley. Use whatever spices you feel called to!
Water – To make the dough come together.

How to Make Quick and Easy Sourdough Flatbread
Add flour and salt to a bowl and set aside.
Next, add sourdough starter, olive oil, and your spices to the mixing bowl.
Using the dough hook, keep your mixer on a low setting and wait until the wet ingredients and spices are combined.
While the mixer is on a low setting, gradually add the flour and salt mixer. The dough will start to come together, but some flour will stick to the sides of the bowl.
When you see this, start gradually adding the water until the dough starts to come together.
Once the dough has come together let it rest of 5 – 10 minutes.
On a floured surface, take a knife or a bench scraper and cut the ball of dough into 8 pieces.
Heat up large pan on medium heat with a little olive oil.
Roll out your dough while your pan is pre-heating. Tip – If your dough isn’t stretching out as much as you’d like, let it rest and then try rolling it out again.
Cook your flatbread for 1 – 2 minutes on each side or until golden brown.
This quick and easy sourdough flatbread is best served warm. Enjoy!
Storage
Fridge – These sourdough flatbreads can be stored in the fridge for 5 – 7 days.
Freezer – Store these in the freezer for meal prep for about 1 month.
